Develop a new Contemporary Carvery concept, offering a different concept from the standard granite carvery style.
Working with the designer it was agreed to offer 4 joints and one special, on 5 individual wooden butchers blocks each with a single carvery pad. A separate wooden veg section was sited away from the carvery to reduce queues at busy times.
In addition the normal stainless steel gantries were replaced with Copper supports, gantries and light boxes to provide a unique carvery display. Hot plates needed to be within easy reach of the chef but could not be on display in the normal plate lowerators.
The copper tubing was cut, bent and welded; the copper sheets were folded and welded and a new method of polishing the finished supports and light boxes was developed.
We also sourced new slow cookers for overnight roasting which also improved meat colour and provided a fast cooking option.
Francis did an amazing job, organizing work in such a way to minimize disruption to guests and staff.
