Food servery counters for the main dining room and the Elwy room, capable of providing breakfast or dinner for up to 400 guests in 90 minutes. Both rooms also required ventilation solutions as ducting could not be run through the walls.
In the main dining room the servery was designed to accommodate a central area where chefs perform theatre cooking and serve food to guests. In the smaller room we installed a straight counter and back bar with a food preparation and cooking unit.
To meet the varied requirements to breakfast and dinner menus we designed a 40mm granite surface with induction units set below the granite, providing heat to chaffing dishes for hot meals, but when switched off allows the granite to provide a cool surface for ambient foods.
